Homemade Chicken Salad

I made it through DAY 2 of Liquids only no problem! The issue came when it was Day 3 and I was suppose to be eating SOFT protein..

Ughhh!!

Anyways for a soft protein meal here is a delicious way to use your left over chicken from a Restaurant or Dinner at your house

The chicken I used, I purchased then pan grilled after seasoning. When fully cooked I weighed the chicken breast (boneless skinless) and it was 8.5 oz.




I discovered this recipe when I went to Applebees for Dinner and ordered a Grilled Chicken something meal, part of their 2 for $20 that my DH and I split. When our meals came we found them to look well seasoned but bland as all get out. I took mine home and decided to turn it into Chicken Salad. I usually buy the Chicken in a can for what 4-5$ CRAZY! Plus I have been on this make it yourself kick. I tried it out and loved it, the following day I had to see if I could replicate the grilled chicken on my own and found myself to be successful even if I used carrots instead of celery in the recipe.


You could always use LOW Fat Mayo, I was out of it though so I used what I had on hand or a mayo substitute that you like to lower the calories. 


Todays WEIGHT 166 lbs total WEIGHT LOSS 68lbs!!
